Sort of made this one up based on some of the beautiful veg growing in the garden of our friend’s house we are staying in at the moment. They own an organic fruit farm here in New Zealand and its a peaceful and grounding place to return to. A simple, delicious and fresh salad that will go with all sorts of other dishes from around the world!
Recipe
- A large bunch/bag of curly kale/cavolo nero
- 2-3 large carrots
- 3 cloves of garlic
- Handful each of sunflower and pumpkin seeds
- 1 tbsp tamari soy sauce
Crush the garlic and add to a frying pan with a splash of oil, rip the kale into large chunks but remove some of the larger, tougher bits of stalk. fry with the garlic and oil on a low heat until softened. Use a vegetable slice to cut thin slices of carrot, add to a salad bowl. Add the seeds to the pan and stir until they crisp slightly. Stir in the tamari, then add the pan contents into the bowl with the carrots and stir. Then ready to serve and enjoy!
