So I have always disliked eggs, which frustrates me because they are so good for you and I need the protein, being a veggie! Its weird, because I really like quiche and frittatas but just not eggs on their own!
I’ve just got back from a week in Greece with a friend, where there was a buffet for breakfast and lunch and I have always had a terrible relationship with buffets, cos I’m just so goddam greedy! The food was also very heavy and oily, so I decided to come back and start a bit of a detox…so heres what I’m thinking – high protein, lots of fresh fruit and veg, herbal teas, lots of water and exercise. Whilst also cutting out caffeine, alcohol, heavy and glutenous foods.
So here is my first breakfast…basically egg and beans for high protein and some fresh veg too.
Recipe
- 1 large organic, free range egg
- 3 florets of broccoli, chopped in half
- 4 small tomatoes, sliced in half
- 2 tbsp black beans
- 2 cloves garlic
- 1 tsp coconut oil
- 1/2 tsp chilli flakes
- 1/2 tsp black pepper
- A sprinkle of salt
- 1 dessert spoon of white wine vinegar
Steam or boil the broccoli for 5 minutes. Chop the garlic cloves into thin slices and add into a small frying pan with the coconut oil and chilli flakes, stir until they turn slightly golden. Add in the sliced tomatoes and stir for 1 minute, then add in the beans and broccoli, stir on a low heat and season with the salt and pepper.
In a small saucepan, fill with water on a high heat and bring to a rapid boil and add in the vinegar. Then turn off the heat and using a fork, spin the middle of the water so you create a sort of whirlpool in the middle of the pan. Do this for a bit, so that the whirlpool is deep, then stop and quickly crack the egg in whilst the water still spins on its own. The egg should be formed into a sort of round shape, leave to cook for 3-4 minutes. You can get a large serving spoon with drainage holes in it and scoop up the egg to check whether the white is fully cooked. Then remove the egg from the water and place on a plate with the veg and beans, sprinkle with extra pepper and chilli and enjoy!
